If I setup a Santricity system with only 2 ssds to start with, then later on add a new single ssd, what are my options for adding that new space to the pool?

You can't use pools with so few disks. You need at least 11 disks.

Your only option are volume groups. You could use
RAID 0 (at least 1 disk)
RAID 1 (at least 2 disks)
RAID 10 (at least 4 disks)
RAID 5 (at least 3 disks)
RAID 6 (at least 5 disks)

Ok so same question but starting with 11 disks. Also I thought DDP minimum was 6 disks?
