VSC is end of support. You should update it to its successor ONTAP tools. You can find a complete list of all the software and its end of life here. VSC is at the very bottom of the table: https://mysupport.netapp.com/site/info/version-support#gsevst
Could you please tell me if and what the replacement is?
The VSC we are using here runs from an individual server not from vCenter. Running from a server not from vCenter was a model of very old implementation, as my understanding. Right?

It’s an appliance like the VSC (at least the lastest VSC versions) named ONTAP Tools. You‘ll have a plug-in for vCenter and everything is done from there.
If you want to manage your backups you have to use another appliance named SnapCenter plugin for vSphere. It will give you another vCenter plug-in. There is no need for the SnapCenter Server if you want to use it for VM backups only.
I’m not sure about a migration of your current backup jobs from VSC to the SnapCenter plug-in. But I build it new from scratch and redesign backups if needed. To be fair the appliances are working very well which wasn’t always the case in the beginning

The VSC we are currently using and running on a Linux server is an old version (6.2 I believe) and not integrated into vCenter. We still use it to generate SnapShots for VMware NFS datastores today. I was told that somehow it is now a manual process for generating SnapShots. The SnapShots are used for restoring VM's when needed by manually mounting a SnapShot in vCenter and then restore VM there, so, which means that we don't use the VSC to restore/recover VM's.
With all being said, my question is, what is the point to continue to use it? Can we just use ONTAP SnapShot policy to replace it?
Yes you can to have the same level you have today.
With the appliance you can do the restores via it as well, which does everything automated in case of adding the snapshot to your ESXi host as a FlexClone and remove everything once you‘re done
