hi @storm dock at a high-level: install similar versions on the new env, stop all the applications on the old env, copy their data directories to the new env, check that permissions are the same, start everything on the new env

i'd do Prometheus first, start and check Prom logs to make sure everything is loaded correctly, then Grafana, then Harvest

upgrades should be fine for Prometheus. Grafana sometimes has bigger changes and we haven't validated dashboards work with the latest Grafana versions, although I think some folks are using latest

Harvest should be upgraded to latest
