Is there a better way to farm for these than cycling through 3-4 different ascended hunt forests and lodestaring to the carnute spawn?

Nope.
Only way to farm for Fabled parts from anything that doesn't spawn as a Fabled is to just mass murder them over and over until you get what you want.
Before this update Carnute dropped a fabled part every 100 or so kills on average, can't say if the drop rates were changed in this update but they likely weren't

i am just now starting this grind and did not know there was an easy(ier) way to get to the carnute?

the carnute itself just roams around forest realms, the sooner you find it after you load in, the closer you're probably gonna be to its actual spawn, so that's where you should put your lodestar, it'll appear near there every time the realm resets (the portal you entered through closes)
if you're having issues opening multiple different ascended hunt forests, make a realm address card inside each one you enter, then leave and reset the hunt forest, and put the address card inside a different portal frame
the same concept also applies to hunt swamps if you're looking for fabled harpy parts and grendel druid parts
