You'll need to build the augmentations for the workbench, so for the rifle you would need to make the crude ammo box close to your workbench and then abracadabra you can make the rifle now
Each gun requires a different augmentation for the workbench so the shotgun needs the crude tea set and the pistol would need the simple saddle rack

im like 28hrs in and still using stone tools
though i have recently upgraded to enhanced now like at hr 24 but they need to nerf this no way it should take all that to make guns

It doesn't take that long trust me, you've just missed the augmentations. Press B and then look for the augmentations category and you do need to go digging through them to see what each does but as long as you bought the necessary augmentations for the guns from one of the traders (I'll find out exactly what traders you need in a second)
I'll grab a screenshot for you the help out, give me two seconds
When you press B you'll see these categories, the first one will be your augmentations that you've unlocked so check there first if you have the Crude Ammo Box (You can get this from Desert Astrolabe Trader), Crude Tea Set (I have no clue where I got this one, sorry) and then the Saddle Bag Rack (Forest Astrolabe Trader) if you don't have those you'll need to go grab them first. Now with the guns schematics you'll need access to the Provisioner realms, each biome have their own gun type with their respective traders. After you have all of the required schematics all you gotta do now is build the augmentations close by to your Refined Workbench and then you should be all good to go. You'll need to make the parts for the gun but all you gotta do there is press C and search the parts up and it'll tell you where and how to make those.

There'll be a green line that appears that shows what stations they'll affect. You can also use the building menu by pressing B and click on the augmentations and look at the details, it'll tell you everything there.

this game seems to be a bit more In depth and complicated then just advance your level, gather, craft, build, now you can destroy baddies. it mostly is, but there is a big learning curve to understand the nuance going into the crafting to unlock and craft the best stuff. it's a bit more of a headache and not the intentional design of the game im sure, but what i've done on my base is have ALL my crafting stations built on one wall. and then all my augmentations built away from them. when i need an augment to craft something in particular, i just pick it up and move it to the crafting station i need. as @dense bronze said, you can press "c" on your keyboard and type in what you are wanting to craft it will tell you which station it can be crafted in and which augments are needed to craft it. (to pick up and move things just press "x" on your keyboard and then press "R" on the thing you want to move around, if you cant pick it up, it might be blocked by something else that you'd need to move first)
Side note if you are still running around with stone tools and you dont have any recipies unlocked you need to go to essence traders in different realms to purchase the blueprints basically to unlock the higher tier craftables. each realm has their own trader with their own shop, some things are shared among traders, but other things are not and each trader will have different things for sale.

You gather materials needed, in this case ingots, then use the smiting station to make the gun parts. Then take those parts to the workbench and put them together to make the gun.
