altitude code isn't precisely accurate to the real world. torpedoes collide with subs if they are within 1/4 to 1/2 the max water depth of them, depending on whether homing or non-homing torpedoes.

do none homing torps adjust there height in water to hit subs?

yes, they adjust towards their current target

this is why a homing torpedo launched a long time ago may pass over/under a stationary enemy in favor of an enemy behind them, whereas non-homing will not do that
