not sure I follow exactly. Can you give a more specific example?
The typical way a payment on SEPA works is the customer comes to your site and you have a form where they enter their IBAN and collect debit mandate. You then call the Stripe API to debit their account. It can take up to 5 days to be notified on your backend about the outcome of the debit and at that point you'd generally fulfill the customer's order.
