I enabled IDeal and Bancontact in my Stripe dashboard. But they don't show up as options in my Shopify checkout page.

What could be the problem?

I am using Stripe only on Shopify (not using Shopify Payments)

We're not going to know much about Shopify's integration as they built and maintain that.

So to clarify, are you integrating directly with Stripe, or is that being handled by Shopify?

Gotcha, then the folks at Shopify are going to be better suited to help answer this. We're not sure how their integration is set up, or what features it supports.

ok but the payments do go through you right? (if I turn on Stripe on Shopify)

I believe so, but I'm not sure if that is always true. I don't know whether Shopify has multiple payment processors that they work with.

They do. So just to be clear - I am not talking about Shopify Payments (which i know is Stripe in the backend)

I am talking about Stripe direct on Shopify without having Shopify Payments turned on.
