Which payment methods are displayed is highly dependent on which ones you have activated, where the customer is located, the currency used, and yes some do not support being set up for future usage

Thanks, that helps. Preferably I'd like to include as many of them as possible. Do you know if there is a programmatic way to check if a chosen payment method allows for future usage, other than catching on that error?

Unfortunately I don't think that is an available API. Your best bet is to activate all the PMs that apply in your Dashboard settings and use the Payment Element which will render an interface for each PM that can apply for each customer/currency
