I don't think you can configure it to use a different email. I believe we send the email to the address on the administrator profile.

I checked that configs and I have active the notifications for the webhooks but couldn't find any place to configure where to send the notifications and under which conditions (like just after 1 failed attempt)
yeah I don't think you can configure those really. Stripe will send the email automatically after automatic retries fail after multiple days
