Okay I cannot find anything published about customizing the Payment sheet. I know we are planning on producing some YouTube videos on this subject sometime in the near-ish future but I don't have a date for when those will be released.

Sure. I know that data is loaded from the Customer Ephemeral Key value but I think you need to pass that when initializing the Payment Sheet in order to assign the Payment Method to that Customer in the first place.
