You can customize the submit button a bit (I am guessing you already found this), but unfortunately I don't think you can customize it to say accept plan like that at the moment https://stripe.com/docs/api/checkout/sessions/create#create_checkout_session-submit_type

Oh and on reading that more I see that that customization is not available at all in subscription mode.

Is that just available for payment mode, not subscription or set up mode ?
