Google Pay and Apple Pay are not compatible with Stripe Tax

If you turn automatic_tax and tax_id_collection off, you will see them show up

Ah, so they aren't! Is there any way to allow users to pay with Google pay and use Stripe tax? e.g. if we were using Elements instead of Checkout?

I don't think that's possible at the moment. I do know we're planning to roll out support for this some time in July or August.
