And for your first question - yes, as long as you have email receipts enabled I'd expect the invoice.paid webhook event to have that populated

we like to test this (invoice.paid has receipt_number) in test mode. Is there a way to trigger it without "manually" send receipt in dashboard? I am afraid our manual action to email this is not fast enough before the webhook invoice.paid is fired and catch by us.

Unfortunately not - there isn't a way to automatically trigger it without the dashboard in test mode
