Well that should mostly depend on whether you are going to control things here as the platform or you want your Connected Accounts to control and have a Stripe Dashboard.

A platform is an account that has sub-accounts through Connect. AKA the "parent account"
I'm not sure I understand. Everything you've mentioned so far can be done with Connect. Is there an outstanding question here?
