So it turns out I was looking at this the wrong way. Cartes Bancaires cards are co-branded with other card networks and those networks are what you will see in the brand field. We have test cards to check this https://stripe.com/docs/payments/cartes-bancaires

I looks like interac has a similar deal, though testing that would be harder as that would take a terminal setup to test with I believe. https://stripe.com/docs/terminal/payments/regional?integration-country=CA#interac-payments
