Yes, if you use manual capture then the funds will be held on the customer's card.

I believe when the seven days passes and the hold is released we'll send a payment_intent.canceled webhook event

will there be information in some of the webhook field that the reason for the cancellation is precisely the overdue hold and not some other reason for canceling PaymentIntent?

I believe the cancellation_reason on the Payment Intent will be 'automatic', but I'd definitely suggest testing this to be sure

Can I speed up the testing process so as not to wait 7 days for the hold to expire?
