hi there! Stripe charges 7% GST on SG based accounts : https://support.stripe.com/questions/goods-and-services-tax-(gst)-for-singapore-based-businesses. So from what I can see, we're charging 7% on the Stripe processing fees e.g. 1.49 * 0.07 = 0.1

Where can I see the tax rate for each country?

unfortunately, we don't have such a list. The assumption is that since you're operating in that particular country, you as a business would be familiar with the applicable tax in that country

Hello, I cannot turn on GrabPay for connected accounts. The “on” button is disabled even in their dashboard settings.

Can you share with me your merchant ID? you can find it from the Stripe Dashboard -> Settings ->Account Details

Yes, it's turned on for the main platform account. But I cannot turn on for the connected accounts.
