Yes....We're in the process of migrating subs out of Stripe to Piano. If we pause the subs, what happens to the accounts in the middle of their recycle?

What happens to a customer that comes over during this recycle? if their subs were paused?

I'm still not fully clear on the comes over piece, not sure I fully understand the context here.

But when you pause payment collection, there are different use-cases that you can model

Oh okay. That'd depend on your integration logic to be honest.
When you pause a subscription, you're pausing payment collection. If you want to stop/pause/continue providing services and keep the renewal cycle consistent to what you have on Stripe, that's something you'd want to chat with Piano about.
