I'm sorry to say i don't see this as a possibility. Payment Intents require static application_fee_amount values so I think you are stuck leaving all the tip to the connect account.

Would there be any issues if we took a bit more and then did a transfer reversal?
Once we knew the post tip amount
You could always take that approach. That'd be up to you and your relationship with the connect accounts

Yeah so we're on the on-screen tipping beta for Canada
and that ends like Jun 15
Currently all the readers are configured like the old model - with reader settings and location, and the new way of doing it is the Configuration object, from an email we got we were told this:
After June 16th, the ReaderSettings endpoint will not be available. Terminal will copy/ migrate your current tipping configs from ReaderSettings to Configuration object at a later date [1].
We also noticed that you are still utilizing the beta version header in API calls. With this update, you should no longer pass a terminal_configuration_api_beta version header when making any API requests. After June 16th, any calls made with the beta version header will fail.
so all the readers should be automatically migrated - but we did configure those readers with the terminal_configuration_api_beta version header
