Okay. I'd like for it to include language that I decide. For instance, it says "pay and start trial" if I include an item with a free trial. I don't want it to say that; I want it to say something else. Can I change the language in the backend?

I see the confusion—by "language" i mean the wording, not the global dialect.

Unfortunately, the wording of the Checkout Page is not customizable.

Not really... for that you would build your own custom checkout page using Payment Element (https://stripe.com/docs/payments/accept-a-payment?platform=web&ui=elements).

Or: Is there a setup where I could have a customer buy both 1) a one-time purchase and 2) a recurring purchase, then for me to decide when in the future the recurring purchase begins?

If you use Stripe Checkout then you don't have as much control over what the checkout page itself looks like.

Well you could use Checkout for a one-time purchase and to collect card details from the Customer and then you could start a Subscription for that Customer later on.
