The API currently allows you to specific only cards
https://stripe.com/docs/api/payment_links/payment_links/create#create_payment_link-payment_method_types
Otherwise your account settings are used, so you can choose what to enable there

But I'd suggest reaching out to our support team for help with setting up your account as you prefer: https://support.stripe.com/contact

There is no option to disable card by product that I am aware of, but you can also share that feedback with support
