No we are not using checkoutsessions, we are creating a paymentintent - but what if the process is disrupted. Would we create a another payment intent or try to lookup the first one?

you could always create new PaymentIntents, there is no need to keep track of Payment Intents, after 7 days(by default) the PI will be automatically cancelled if not used
