Here's what I'm seeing.

okay wait seems like I misunderstood your question completely.
Are you not seeing tax and shipping information on the payments themselves even after entering them while testing?

correct no tax or shipping is added to the final payment process while testing
It shows up in Payments as $30.00 even
In the "Products" menu - under "Shipping rates" on the left menu it's set to Ground Shipping $10.00
Tax Rates in that left menu are set to "You've activated Stripe Tax" - so the auto is on
do these just not show up in tests?
because there's a button that says "+ Add a test tax rate"

I'm looking at the Payments screen... clicked on "Payment Links" - I see the T-Shirt Lt. Blue (L) and it says in grayed out text: Tax included in price: No 😦
I chose "Clothing and Footwear" as the Product Category.... do I need to set a special tax rate for that category somewhere?

I'm gonna reset that default product tax category to "General - Tangible Goods" because the description says: "Any tangible or physical good. For jurisdictions that impose a tax, the standard rate is applied."
