the docs say this is due to a payment intent...so seemed like it was only possible in the payment mode, but the event seems like it could be from subscription invoices too

Yes, you'll also see payment_intent related events when an invoice is paid. You can use test clocks to test out. https://stripe.com/docs/billing/testing/test-clocks
