No the payment is processed through our end by calling the api stripe.payouts.create but now on the stripe dashboard i want to pause a transaction as it takes time to get the money to your bank accounts.

No problem. or can you share with me your merchant ID? you can find it from the Stripe Dashboard -> Settings ->Account Details

The Payout will be sent to your bank account automatically.
If you want to pause automatic payout and perform payout manually, you can change the payout schedule to manual in this page https://dashboard-admin.stripe.com/settings/payouts

But here i am getting only two options Edit Payout schedule and turn on negative balance debit and when i am clicking on Edit Payout schedule it gives me two options
Automatic and Manual and by default manual is selected.
But you said we have selected the automatic in our settings.

The automatic payout is for your own account, not the connected accounts
You can go to the connected account details page first i.e., https://dashboard.stripe.com/connect/accounts/acct_XXXXX/activity
Click on the 3-dot button on the top right corner and you will see the Pause payouts button there.

When payment is paused. the connected account will be unable to charge the customers anymore.
