yes, so that I don't have to explicitly define it via code - would be useful to have this set by the Stripe user

At present I think it is required to provide the allowed_countries array. The API request will likely fail. But I can make this a feature request.

Well this is still not something the customer would get to set. You, the Stripe user, define the allowed countries. The customer using the Checkout form would select from that list for the country they wish items to be shipped to.

Yes, exactly. It's more ideal for the Stripe user to define this, not the developer for the Stripe user.

And whatever is defined is the dropdown options available to the customer at checkout form

I don't think I saw a Stripe dashboard UI to be able to set that, however
