Not for state I think
For state code, I even got text in their native country, such as กรุงเทพมหานคร for Thailand country
but I just want a list of state codes (or name) for Canada, US, and Australia

yeah, it's also going to depend on what your actual integration is on the frontend as to where the customer enters that information. Like if you use our hosted pages or have your own input directly passing to the API. Ultimately I sympathise, not all this data is completely consistent
no docs either I'm aware of, in the API itself those fields are just freeform strings. I believe we're tightening this up over time so that hosted Stripe surfaces do validation at least

so free form text should be the one list in Stripe checkout page?

as far as I know in Checkout it's a dropdown for the value that corresponds to state so the data should be consistent
