Yea poking at the example myself, but really I'd say any of the options you described would work fine
Depends on whether you want it customized for your user/customer flow, or just demo the general UI
Referring to Stripe's example is obviously the least work
but you could hypothetically set up a test account to showcase the customer experience, yes

I hate to create and maintain a new Stripe account just for this. Ok, sounds like the only easy solution is to refer to your docs with some note to click that button.

The version in the docs creates a new test customer for each instance, as far as i can tell
