different currency charges are converted automatically to the default account currency? (unless of course there is a bank account with that currency attached to the connected account)

yes that's my understanding. this is mentioned in the dashboard settings https://dashboard.stripe.com/settings/payouts
Charges for a currency without a bank account will be converted to your default currency

That means that if I receive ILS charges to a USD account and I want to transfer them cross border to an israeli bank account they will be converted twice, once to USD on the USD account and second on the receiving cross border account to ILS?
