It depends on your fund flow. If you are using DirectCharge/Standard connected then they need to manage the product. If you use Destination Charge or Separate Charges and Transfer, then you are the one to manage Products

What type of charges similar businesses use? Also Let's just say I have a product here, where would I "attach" the creator that sells this product, that I could pay him out later

You don't "attach" the product to a creator. Your creator will have a separated Stripe Account. The product will need to belongs to either your account, or their account, depends on the Fund flow/Charges type listed in above Documentation
