We have some good rate limit documentation here, including things you can do to avoid being rate limited, but it's designed for the developer of the code in question: https://stripe.com/docs/rate-limits

If you're using Zapier that means you may not have enough control to make the changes required to avoid rate limits. If that's the case I recommend you do two things: 1) contact Zapier's support to explain the situation and ask if there's anything they can do to help and 2) contact Stripe support to have them look at your account and see if a rate limit increase makes sense for your situation: https://support.stripe.com/contact
