The resulting lookup on Texas CPA site is attached. Says 6.75% is expected, but invoice calcs 8%

It looks like you are setting that up correctly from what I can see. I think that you should take this question to our support team. They will be able to better speak to how Stripe tax is working here https://support.stripe.com/?contact=true
I don't know Texas law, but I do know that in California, the many, many local tax rates depend on the nexus between seller and buyer - i.e. generally we are responsible for State & City/District Taxes for sales "at"our location (i.e. curbside pickup), and only State level taxes for sales delivered to any location outside our local district. That's one of the reasons you'll have to work with both Support, and very likely some legal support to resolve.
