Correct - but it's not clear to me how to do that + how to make stripe aware of that
Is there an account capability when I am creating accounts I should ask for?

Thanks Snufkin - does that mean that if 1- debit_negative_balances is set to true and 2- if my connected accounts onboard with their bank account, then Stripe will be able to debit directly from their bank account?

Yes that is correct. I"m not sure if we simulate a negative account balance resulting in an external account debit
You can test it but even in test you'll have to wait because those reconcile on a daily cadence
