The due_date was null when the invoice was in draft

There's no chance that this behavior changed recently is there?

I have a series of historical/unfinalized draft invoices in our database with a due_date that is days_until_due after the time that the draft was created, and we don't have any code on our end that would be calculating that.

The due_date will also be null for invoices where collection_method=charge_automatically.
