Sorry for the delay! The mandate can be found in the Charge object. It's in payment_method_details.sepa_debit.mandate

It's a bit hidden, but the subscription has invoices, the invoice has a payment intent, and the payment intent has a charge.

that's expected, we don't send any emails in test mode.
