In that case when they go to Payment Methods they first see this:

This is because they have been configured to have their payment method settings managed by the platform.

However, I think they should be able to click on the manual settings page link and configure some aspects of Apple Pay

You should be able to verify this as the platform, logging in as them.

Yes the more recent change in Standard Accounts with Controlled By Single Platform (CBSP) means more of the account configuration gets moved to the Platform.

It's a switch from how some users are used to the Dashboard behaving

if they can't set up apple pay with their web app though, should they be able to reach out to you?

They should. Depending on how their settings are configured they may get redirected back to the platform though.

setting up apple/google pay is a Stripe feature, and we're confident we've setup the method

if they needed to debug it not working, will Stripe not support them?

I meant in general. If the method is enabled then that's fine but often standard accounts will get redirected because the platform has not enabled the method
