Online I have basically found people recommending hiding it entirely, which is a bit more than I want to do.

Yeah none of the options are great here - the best option is you could disable the postal code field from Stripe's Card Element and collect it separately in your own UI field (so it's not subject to our incorrect validation). A more drastic workaround would be to switch to Payment Element (which doesn't have this same flaw)
