So we may have customers from both EU & US (and potentially more over the world). We will ask them to set up payment method (for off session payment) beforehand and send them invoices based on their product usage. The charges will be based on Customer's preferred currency.

There's no specific US only feature of invoicing in that case. You might have difficulty with prices in different currencies.

Yeah, that difficulty is expected. However, if we only accept USD for EU customers, I assume that would also be supported out of the box?

I would not be the best person to advise on that as it's banking/regulatory. Your best bet is to ask Support https://support.stripe.com/contact/email
