Hi! Quotes are a very complicated API to be honest and not something I'd generally recommend using — and to be honest, I don't have much knowledge of it myself.

But in general the Product object only represents the thing being sold(it has a description which is what is what's shown on customer-facing locations like invoices/receipts/the quote PDF), and the Price has the dollar amount and any recurring component to the payment. So if you're charging different people different things you generally need multiple Prices yes.
