It sounds like you want to set the Subscription's cancel_at property when updating the subscription https://stripe.com/docs/api/subscriptions/update#update_subscription-cancel_at

The doc I provided defines when a subscription ends, as far as I know that is the best place to update a subscription to end on a certain date.

Are you trying to figure out what code to add or change to allow that subscription cycle date to be changed?

Or are you trying to change something about an actual subscription that you personally have on this app?
