How can they remove their card detail in your scenario? Via Customer Portal?

We would be taking a monthly payment from them. To remove their details I believe they would need to login to Stripe and remove them.

No. Customer doesn't have a Stripe account

They can only remove it if you provide them some UI, and call Stripe API under the hood, or if you provide them a Customer Portal

Either way, you have the control over where that could happen
