Hey there: you can look at using separate auth and capture, but this is limited to 7 days:

For payments farther than 7 days out, you'd collect payment details but create payments later closer to service time:
https://stripe.com/docs/payments/save-and-reuse

Note that the payment may fail at that time, so you should allow time for the customer to provide payment details before service delivery, at your discretion.
