AFAIK we require a single "settlement currency" for each account in order to pay out funds to the user's bank account

You could try creating separate accounts for each currency and customer but that sounds like a really tough work-around

Ya. I guess I am looking for a virtual currency creation - like a gaming system where a random currency is created and trades are made using that virtual currency.

I don't think that makes sense with Stripe products from what I understand. All our tools are designed to move actual currencies along financial networks managed by both us and banks/institutions.
