To your 2nd question, yeah express is more limited, but it's really your business usecase that matter. A lot of big merchant use express extensively

In my experience, when a merchant want to hide Stripe existence completely from their connected accounts, they would prefer Custom over Express

Like your user may uses your business but never know you are using Stripe or any Payment Processor
