Hi, we are using Custom Connect accounts which we manage on our back end.

We don't want to for our company's Stripe balance to be automatically withdrawn to us every day, because most of it will be paid manually to connect accounts.

Does that mean turning off the automatic payout schedule in the Stripe dashboard?

2nd Q: When we create a bank transfer (UK) to a connect account, the transfer initiates immediately or in 24hrs by default? Does the transfer stay in the balance of the connected account for 24hrs before starting the move to their external bank account?

Payout => send money to your bank account
Transfer => send money between Stripe accounts
So in your case you probably want transfers
