Great! Am I correct in thinking that we need only add our domain to the Apple Pay section in Stripe dashboard for this to work? (Sorry this might not be related to dev anymore)

Yup, once you verify your domain, then Apple Pay should be available in that element.

(Assuming you're using Safari on a macOS or iOS device, have a saved card, etc)
