I've looked into app store rules and for what i can gather In-App is the only way to legally do so, giving Apple their 30% cut, but i wanted to double check that things haven't changed
i know using a webView is approved now in some instances
Personally, I don't know very much about the specific rules/regulations put in place by the app store. I'd recommend doing a read through of their developer guidelines (https://developer.apple.com/app-store/review/guidelines/#payments) to see what category your app falls under and go from there

AFAIK you'd still need to use the In-App Purchases for subscriptions. While there are talks going on to potentially not have that limitation, I don't think there has been any actions on that front.
You can only use Stripe for good/services that are not part of the app(like you can use Stripe to pay for a t-shirt be delivered to you in a fashion company’s app, but you can’t use it to pay for a skin in a mobile game).
right, that was my understanding, i've also heard about the changes and i see notes of them but nothing concrete
what we are doing is more along the lines of a discount model by having our Plus service
you pay 10 bucks a month and our physical good services, say hiring a plumber or something, you would receive 20% off the plumber
so its a discount over a physical service, but to acquire the Discount you have to pay us, seems to be a bit of a gray area
yeah I'd definitely recommend reaching out to Apple developer support or just using the forum to clarify this
