Hello Rubeus, tahnks for your answer. The problem seem to be that the magento backend don't want to use the registered API key defined in the backup ether it don't want to switch on live mode after I've made some test on the test key.
I've begin to try with the test key "test_a" and everything went fine. After a little time, I've the mode into live mode with the key "live_b" a week ago and no error message has appeared at this time, even the webhooks was working. Today I've try to make a payement with a real card to test it and I've got a message error telling me that I'm trying to pay with a real card on a test mode. After some digging thrue log, I found that no matter what I do, the configuration keep my old test key "test_a" as I've changed either test and live key on stripe API dashboard & stripe magento dashboard. When I search for the registered key in magento file or in the db, I can't find anything

I wonder what I'm missing to make this work properly
