Sorry to hear that you're running into problems, but that integration was built by WooCommerce and us here at Stripe aren't familiar with how it's structured or functions. The WooCommerce support team would be better suited to assist with that.
So should I dump the WooCommerce Stripe set up and start again
I'm not sure, and that's going to be up to you. I'm not sure how close you are to having your WooCommerce setup in the state that you're hoping for.
I really need someone to talk me through it but I have to say I'm not impressed by Stripe support
Sorry, but my team and our support team do not know how to setup the WooCommerce integration. If you're looking at building your own integration then that is something we could assist with when problems are encountered.
All I want to do is be able to take payments via Stripe. I didn't know if WooCommerce Strip was the same thing. I have been emailing and messaging and told someone will call me (which they don't). I thought PayPal customer service was bad but this is dreadgul

The WooCommerce Stripe integration is an integration that was built by, and is maintained by, WooCommerce so they can offer a more streamlined experience. Stripe isn't familiar with how that integration is built or how to leverage it.

So that's not a payment gateway? It presumably takes the customer out of your website into a separate payment facility?

Yes, that flow takes you to a Stripe hosted checkout page. If you're comfortable with coding and have a backend sever to handle the backend processes, then you can build this payment flow into your website:
